Blueberry Bagels

These New York style bagels will blow your socks off! They‘re flavorful, chewy and exactly what you want to be eating for breakfast. Fresh blueberries also just add that extra flavor bomb!

Ingredients

  • 1 (7g) package active dry yeast
  • 25g sugar
  • 295ml warm water (divided)
  • 420g all-purpose flour
  • 8.5g salt
  • 170g blueberries (tossed in 30g all-purpose flour)

 

Directions

  1. dissolve the yeast and sugar in 1/2 cup of warm water {let rest 5 minutes}
  2. mix together the salt and the flour – making a well in the center
  3. add the yeast and the additional water to the flour
  4. gently fold in the berries
  5. knead until you have a soft and elastic dough {either by hand or using the dough hook of a stand mixer} don’t worry – the dough will look quite purple
  6. cover the dough and let rise until doubled {about 1 – 1/2 hours}
  7. divide the dough into 8 balls
  8. press into the center of each ball forming a hole, and stretch to form the bagel shape
  9. let rest 30 minutes
  10. pre-heat the oven 220 degrees C
  11. bring a large pot of water to a boil (add a tbsp honey!)
  12. boil the bagels – 1 or 2 at a time for 3 – 4 minutes {they will float to the top when ready}
  13. place on baking sheet and bake 20 minutes
